Stuffed Salmon with Basil and Tomato

6 to 8oz portions of salmon per serving, bones removed and sliced down the middle but with the skin left intact (we can do this for you!)
2 T olive oil
Salt and pepper
¼ cup ricotta cheese
¼ cup feta cheese
Fresh basil
1 T balsamic vinegar
1 cup little tomatoes, sliced
Rub your salmon with the olive oil and season with salt and pepper. In a dish, stir together both cheeses with some fresh cracked pepper. Tuck a fresh basil leaf in the cut and stuff the cheese in as well. Cover with foil and bake at 350 for about 20 minutes. While your salmon is cooking, marinate the tomatoes in a bowl with 1T olive oil, the balsamic vinegar and a pinch of salt. When the salmon is done cooking, slide it on a plate and top with the tomatoes. Delish!
