Pan Seared Sablefish |

2, 3oz cuts of skinned sablefish per person
blackening seasoning
salt
italian breadcrumbs
1/2 T olive oil
Salt your fish then sprinkle liberally with blackening. Roll in breadcrumbs. Heat the oil in a small fry pan to medium high and place your sablefish pieces on the heat. Sear about 1 minute on each of the four sides and serve with a salad and a side of fried green tomatoes!
This is a very simple preparation for sablefish, but I make no apologies - it's fabulous. If you're more interested in exploring the Asian-style cuisine or something a bit more advanced take a look at one or two of these links. When I'm feeling adventurous I'm going to try a few of them myself. :) We've heard good things!
