Quick Note: All three of these recipes are "leftover salmon salad sandwich" ready! I sometimes even cook the first recipe specifically to make sandwiches out of. If you place the cooked salmon in a bowl and flake it up with a fork the topping makes a nice creamy base for the fish and you can also add a spoonful of tartar sauce or mayo to moisten it up even more if you like. Yum!
My Grandpa's Salmon
This salmon is so yummy... the mayo holds in the moisture and the brown sugar really brings out the sweetness of the salmon itself.
6-8oz salmon per person
Lemon
Onion powder
Salt
Mayo
Brown Sugar
Turn your oven on 350 and line a baking dish with foil for easy clean-up. Place your salmon filet on the foil and use half of your lemon to squeeze the juice over the salmon. Salt your fish lightly, then liberally sprinkle it with the onion powder. With a butter knife, spread a layer of mayo over the onion powder as thinly as you can. Grab a pinch of brown sugar and crumble it over the top of the fish. Bake for 12-20 minutes (12 for a half pound piece... up to 20 for a larger one) and serve with your favorite side dish and a glass of red!
Pesto Baked Salmon
6-8oz salmon per person
Pesto (make your own: we do ours with fresh basil, garlic, macadamia nuts, olive oil and parmesan cheese.... or feel free to buy some prepared pesto at the grocery!)
Olive Oil

Turn your oven on 350 and line a baking dish with foil for easy clean-up. Place your salmon filet on the foil and sprinkle with salt. Drizzle just a touch of olive oil over the fish and then slap a nice thick layer of pesto over the top. Bake for 12-20 minutes (12 for a half pound piece....up to 20 for a larger one) and serve with your favorite side dish and a glass of white!
Salmon with Curry Rub
6-8 oz salmon per person
Olive Oil
Salt
Curry Powder (we used Vietnamese curry from Buck's Fifth Avenue)
Turn your oven on 350 and line a baking dish with foil for easy clean-up. Place your salmon filet on the foil and sprinkle with salt. Drizzle some olive oil over the fish and then rub the curry powder in, making a nice paste and a bit of a mess. But it's fun! Bake for 12-20 minutes (12 for a half pound piece....up to 20 for a larger one) and serve with your favorite side dish and a cold glass of Ninkasi Total Domination Ale.
