Spicy Seafood Rice

This recipe is pretty basic - I went with canned spicy marinara sauce to make it simple (and because decent fresh tomatoes are out of season) but feel free to get fancy and stew your own. Regardless, the combination of spicy saucy rice and seafood is a delicious one! ~serves 2-4 adults for dinner~ ingredients

  • one seafood combo pack
  • 1/4 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 and 1/2 cups white rice
  • 2 cups water
  • olive oil
  • salt, pepper
  • jar (24oz) of spicy marinara sauce (arrabbiata/diavolo)
With an electric rice cooker, add the rice and the water, then top with the onion and garlic and choose the settings for basic rice.  (You can also do this on the stovetop in a pan.)  Rinse the clams from your combo pack to remove any dirt
or debris from the outside of the shell.  Once your rice is done cooking, (moving as quickly as possible to preserve the heat/steam), toss the clams on top of the hot rice and slap the lid back down. If all goes well the clams will cook on top of the rice on the 'warm' setting in about 10 minutes.
In a large pan, drizzle some olive oil and add the rest of your combo pack. Arrange in a single layer and salt and pepper the fishes. (Add the clams as well, if they didn't get cooked with the rice.) Turn your burner on medium-high heat and let the fish cook for 2-3 minutes, then flip the prawns and cod pieces and give the scallops a little toss and cook for about 2 minutes more. Add the rice, pour in the spicy sauce, and fold to combine.  Continue to cook for an additional  2-3 minutes or until everything is piping hot and serve with a green salad - enjoy!
