Sour Cream Halibut

1/2 c. white wine 1 tsp. salt 1 lb. halibut fillet (skin off) 1 c. sour cream olive oil 1 c. bread crumbs 2 cloves finely chopped garlic 1/4 c. chopped onions Marinate halibut in a few splashes of white wine and a sprinkling of sea salt for about 30 minutes. Sautee the onion and garlic in a bit of olive oil (if you have other veggies handy, chop and throw those in too! We like to use mushrooms often.) Remove the veg from the heat and stir in sour cream. Remove the halibut from the marinade, roll in breadcrumbs and place in a baking dish. Smooth the sour cream/veg mixture on top of the halibut and bake at 450 for about 20 minutes or until fish flakes with fork. Serves 2+
