Shrimp Diablo |
There really is nothing more disappointing than diablo sauce that isn't very spicy - it's sort of like soggy toast. Fair warning, this recipe is not one of those disappointments! If you don't care for *very* spicy foods feel free to back off the chili paste and crushed pepper a bit. As it is, this recipe is indeed rather devilish! serves 4 for dinner ¾ pound shrimp 1 T olive oil Salt and pepper 1 T chopped garlic 1 and ½ T chili paste with garlic ½ tsp crushed red pepper 1 tsp cumin 1 can diced tomatoes 1 can tomato paste (the little one) 1 T honey 1 package angel hair pasta In a large pan, drizzle 2T of olive oil and turn your burner on medium high. Add the shrimp to the pan, sprinkle with salt and pepper, and toss a bit to make sure you've got just a single layer. Cook for about 2 minutes on each side and remove from heat. In a sauce pan, combine all of the remaining ingredients and simmer over medium heat for about 15 minutes, stirring occasionally. Fold in the shrimp, simmer for one more minute, and pour over cooked angel hair pasta. Spicy fabulous! (And excellent served with a frosty cold beer to kill the heat.) |
