One of the great things about sole is that it's perfect for stuffing. It's thin enough that it cooks perfectly and it will hold together really nicely for you in the oven. You can stuff sole with just about anything, our favorites include crab meat and pepper jack cheese, quinoa or rice, fresh spinach and feta, and the standard mashed potatoes. Dinner is done in less than 30 minutes and you can pat yourself on the back for a culinary masterpiece. Yay!
ingredients
- 1 large (2 medium) petrale sole filets per serving
- prepared mashed potatoes or other stuffing options
- smidge of olive oil salt, pepper and dill
- parmesan cheese for garnish
Preheat your oven to 350. Lay out the sole filets and dribble a bit of olive oil over each one. Roll them around a little bit to coat the fish, and then salt and pepper the filets and sprinkle a bit of dill. (Give them another roll to evenly distribute the spices.)
In the widest part of each filet add two big spoonfuls of mashed potatoes and roll up either ends of the fish. Place the rolls seam-side down on a foil covered cookie sheet (easy clean-up!) and pop them in the oven.
Set your timer for 12 minutes and throw a salad together while you're waiting. Or, you know, drink some wine. Ha! Okay - when the timer bings, open the oven and add a little pinch of parmesan cheese to the top of each roll. Set the timer for 3 more minutes and turn the heat to "broil". Keep an eye on your fish and when the cheese gets toasty
bubbly they're done!
