Jumbo Shrimp Cocktail

Shrimp cocktails are usually featured in the 'appetizer' portion of a menu or a cookbook.
*This* shrimp cocktail could easily hold down a place as an entree. It's chunky, filling, fancy and completely over-the-top delicious. Scoop it into little shot-sized glasses if youwant to serve this as a mini dish, or serve it in a bowl with a side of tortilla chips for a meal. Whatever you choose, you'll be deliciously happy and looking for maybe just one more shrimp...
serves 2 for dinner, 6-8 for appetizers
1/3 cup cocktail sauce
1/3 cup marinara sauce (we have a fresh, locally made marinara sauce in our cold case with the cocktail sauce this week!)
the juice of 1/2 of a fresh lime
1 medium tomato, chopped
1 fresh jalapeño, seeded and minced
1/4 of a red onion, minced
1/2 cup fresh cilantro, chopped
1 ripe avocado, cubed
3/4 pound salad shrimp
In a large bowl, stir the cocktail sauce, the lime juice and the marinara sauce together. Add the remaining ingredients, then fold to combine. Let sit for about 10-15 minutes (perfect amount of time to make the *other* kind of cocktail...) to let the flavors develop, then fold again. Serve in a pretty glass with a slice of lime and enjoy!
