Cod in Orange Saffron Ginger Broth

This is a nice little quick-and-easy poached cod dish.  The flavors of the ginger and orange juice are bold, which is a nice accompaniment to the light flavor of cod.  Serve with rice or pasta and you've got a complete meal!

 

serves 2 or 3 for dinner

 

  • 6-8oz fresh fish per person (boneless and cut in about 2" chunks)
  • Salt, pepper
  • 1 T olive oil
  • 1/4 onion, chopped
  • 2 cloves garlic, minced
  • 1 T ginger, grated
  • 1/2 cup orange juice
  • 1/2 cup white wine
  • 1 T honey
  • pinch of saffron (optional - mostly for color)

 

In a medium pan with a lid, sauté the garlic and onion in the olive oil for 3-4 minutes over medium high heat or until translucent and tender.  Add the ginger, orange juice, wine, saffron and honey, then stir to combine.  Season the cod chunks with plenty of salt and pepper (my dish came out a little under-salted, so I'd say a bit more than you'd think because some of the salt will be needed to bring out the flavors in the broth) and then place them in the liquid.  Simmer over medium heat for about 8 minutes with the lid on...and... that's it!  Serve as a soup or over rice and enjoy!
